Korean Specialty Dried Wind Persimmon

Every year when it comes to the season of making dried persimmons, my parents are very busy.

A good persimmon cake starts with peeling, and goes through more than 10 processes, which takes about 50 days to make. It really takes a lot of work to make a good persimmon!

1. Carefully select fruits
Choose fully mature persimmons with regular shape, no longitudinal grooves, high sugar content, and few or no seeds.

2. Manual peeling
A pedal-type semi-automatic peeling machine is used to peel the peel in a circle, which makes the peel clean, thin and even.

3. Dry naturally
Dry the peeled persimmons in a place with sufficient light and good air circulation until the moisture content reaches about 58%, then stop drying.

4. Knead carefully
During the drying process of the persimmon cakes, knead and massage the persimmon fruit once every 2 to 3 days, for a total of 3 times, to make it into a cake shape.

5. Natural frost
After drying, the dried persimmon cakes are separated by dried persimmon peels, stacked layer by layer in a ceramic jar, and then sealed to allow white frost to condense on the surface.
